This is an update to reddit user u/david-saint-hubbins's April 2019 r/Jeopardy post explaining how to watch Jeopardy! if you don't have a TV, don't have a DVR, live somewhere without reception, miss your local broadcast, etc. (It is an updated and lightly edited version of DSH's original. As my updated post from January 2021 was flagged and removed from Reddit, I'm moving the content outside its jurisdiction. Additionally, here, I can keep it up to date more continually.)
There are a number of streaming services that offer live TV plus DVR capabilities for about $70-75 per month (Hulu, YouTube TV, etc.). If you live somewhere where Jeopardy! is broadcast locally, that's an option.
A much cheaper option is Paramount+, whose premium plan (now called "Paramount+ with SHOWTIME") is $12/month ($120/year if billed annually) and allows you to watch live local broadcasts from any CBS affiliate. ONLY the premium plan includes access to local CBS stations; however, existing CBS All Access subscribers at the lower ad-supported subscription tier (now "Essential") as of March 4, 2021, the day of the changeover, are "grandfathered in" and retain local station access so long as they remain subscribed. Combine that with an internet browser extension that spoofs your location, and you can watch Jeopardy! live as it airs on various CBS stations around the country, 11 different times per day.
Here's how. Install the browser extension Location Guard in Mozilla Firefox. Close and restart Firefox after you first install it. In the Options tab of Location Guard, set the Default Level to "Use Fixed Location." Then go to the Fixed Location tab, zoom/scroll the map to the desired city, and drop a pin. (Make sure you actually drop a pin; it doesn't work if you just scroll to an area.) Then log in to Paramount+, and click Live TV to stream the local broadcast from the desired area.
Peacock now offers local NBC affiliates on its top tier, Premium Plus; like Paramount+ with SHOWTIME, it's $12/month, $120/year if billed on an annual basis. I don't have this service, so I haven't tested it to see if the technical workaround I describe above works with it.
Here's the full list of affiliates; below it, tables of CBS and NBC affiliate Jeopardy! airtimes (1 per time slot), in order.

Troubleshooting: To pick a new city, you must manually locate it by zooming out and scrolling around on the map, but that's a minor inconvenience. Once a new location is selected, close Firefox and reopen it to ensure Paramount+ registers the new location. (Another option is to have the Firefox privacy settings to delete all cookies every time I shut down the program; however, this will require you to log in to Paramount+ every time, but it works.)
Local airings will sometimes be pre-empted for sports. Most prime time airings have multiple options, so check the whole list (linked above) if the first station you try isn't airing it. (This is why WTSP is listed instead of Boston's WBZ; the latter pre-empts Jeopardy! every Friday during the National Football League season for Patriots All Access.) Just make sure it's a CBS station. (Specifically: the listed options for 1:00 pm, 6:00 pm, 6:30 pm, and 10:30 pm (all Eastern) are the only ones at their respective times.)
^ — Hawaii, like Arizona, does not observe Daylight Saving Time. Thus, between the first Sunday in November and the second Sunday in March (generally 18 weeks), 4:30 pm Hawaii time translates to 9:30 pm Eastern. None of the other stations airing the show at 10:30 ET are affiliated with CBS.
