This table piggybacks off the official tracker provided by the Jeopardy! producers.
Included are all players who won three or more games and made their last appearance between June 7, 2019 and January 5, 2021 (Brayden Smith's loss), covering 258 regular-play games, as well as players who qualify automatically by virtue of tournament victories (CC = College Championship, TT = Teachers Tournament).
With respect to the coronavirus pandemic: per the show's own announcement, Jeopardy! suspended production on March 20 until further notice, causing Season 36 to be truncated by six weeks. Season 37 started on time on September 14, with only Southern California residents being cast to play. Zach Newkirk, the defending champion on June 12, did not defend in the opener; he returned on January 28, 2021, and defeated 7-time champion Brian Chang. At the end of that episode, guest host Ken Jennings stated that Chang's run ended after the cutoff for the Season 37 ToC (thus indicating that one would be taped and aired in 2020—21); the show's own ToC tracker, linked above, states that January 5 is the cutoff date.
Brayden Smith suddenly and shockingly passed away on February 5, 2021. Steve Moulds, the next eligible player, took his place.
The tournament aired from May 17—28, 2021, with 2017 Tournament of Champions winner Buzzy Cohen guest hosting.
